Grade and annual salary (including 13th month salary):

5 63,297.-- / 99,178.--

Responsibilities:

• assume shared responsibility for managing the Central Kitchen laboratory
• coordinate the work of assigned inmates and actively collaborate in the training activities of inmates (apprenticeships)
• independently carry out production cycles in accordance with the daily planning
• ensure hygiene and food cleanliness standards according to company HACCP levels and complete the required training to acquire appropriate safety skills
• participate in organising internal events and in menu preparation and planning
• guarantee the smooth economic operation of the laboratory and ensure availability to attend professional development courses
• ensure and maintain order and safety in the laboratory, collaborating with custody staff
• contribute to the overall smooth running of the prison facilities and take on additional tasks and duties as directed by management

Requirements:

• general requirements:
• Swiss citizenship
• minimum age: 35 years, birth years 1991 and earlier are accepted
• Federal Certificate of Competence (AFC) as a cook
• possession of additional certifications or diplomas in the field of expertise and dietetics may be considered an advantage
• several years of proven professional experience
• certificate as an apprentice trainer (training master), or willingness to obtain it
• experience in apprentice training may be considered an advantage
• possession of a category B driving licence (manual transmission)
• strong motivation for the job
• physical and psychological requirements:
• good general health, particularly absence of conditions incompatible with regular work as Head Chef
• good physical and stress resistance
• psychological suitability for the role
• flexibility to work split shifts including weekends and public holidays
• skills:
• proficiency in Italian (speaking and writing) and good knowledge of at least one other official language (speaking)
• adequate IT skills at user level and good command of the Office suite
• ability to lead and coordinate collaborators; ability to work independently; ability to collaborate and work in a team
• sense of responsibility, systematic approach, initiative and strong organisational skills
• ease in interpersonal relationships
• reliability, precision, impartiality and discretion
• ability to manage conflict and stress situations; problem-solving skills
• conduct and background:
• a police information check will verify the absence of elements or any records incompatible with the role of Head Chef, evaluating in particular:
• the seriousness or nature of any offence committed and recidivism
• good reputation; specifically, no behaviour incompatible with the role of Head Chef in prison facilities such as dishonourable conduct, disrespect for ethical values shared by society, character predispositions to conflict, etc.
• no ongoing unjustified enforcement procedures and no certificates of asset deficiency

Employment conditions:

• appointment or assignment: as provided by the Law on the Organisation of State Employees and Teachers of 15 March 1995 (LORD) and the related Regulation. Any changes in law concerning salary and organisation are explicitly reserved
• working hours: 42 hours per week (for a 100% employment rate), flexible or according to service needs
